Healthier Banana Bread


I have never really been a big baker but the more I do it, the more I like it.  I have been experimenting with different recipes and substituting applesauce for oil in recipes.  I made a banana bread that is delicious.  It is so easy that even a non-baker can make it and have it turn out great.

Ingredients:

2 cups flour
1/2 cup applesauce
2 eggs
3/4 cup brown sugar
1 tsp baking soda
1 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp nutmeg
4 ripe-overripe bananas mashed with a fork

Preheat oven to 350


Mix applesauce and sugar in a bowl.  Add eggs and vanilla extract and then bananas.  Mix Flour baking soda, cinnamon, and nutmeg in a separate bowl.  Add wet ingredients into the dry and mix just until blended.

Pour into a greased 9x5 pan and bake for 60-70 minutes until golden brown on the top and a toothpick comes out clean.
