Grilled Chicken & Veggies



I don't know about you, but I am constantly grilling year round.  I love my grill and I especially love my GrillPro 98130 Porcelain Coated Round Grill Topper, 11-Inch Diameter and 2-1/2-Inch Deep.

This is a simple and quick meal that everybody can enjoy.

Ingredients:

2 Chopped boneless chicken breasts
1/2 bunch asparagus
1 Yellow squash
1 Zuchini
1 Red onion
1/2 tsp minced garlic
1/2 cup italian dressing
salt and pepper to taste
2 cups cooked rice



Mix all ingredients in a large bowl and let marinate for at least 10 minutes.  Preheat grill while marinating the ingredients and start the water for your rice.  I normally use 1/2 chicken stock and 1/2 water for my rice and add any seasonings that I like while it's cooking.


Spray your grilling bowl with non-stick spray before putting on the grill.  Add your mixture to the bowl and put on the grill.  Remember to use a plastic utensil to stir as it is a non-stick pan and you don't want to scratch it.  Cook on medium-low depending on your grill.



Cook for about 15 minutes stirring often so it doesn't burn and so that it all gets cooked thoroughly.

Make sure your chicken is at 165 and serve with rice.
