Black Bean Salsa and Chicken Quesadilla

I had never even tried black beans let alone use them in anything until I went to a cookout at my sister's.  She made a delicious black bean salsa. I went to the store the next day and got some ingredients that I thought would be good, and it is!  I am addicted, so here it goes!

Ingredients for salsa: 
1 can Black Beans strained and rinsed
1 tomato diced
1/2 red pepper diced
1/2 onion diced
1 ear of corn cut off
1 tsp minced garlic
1/4 tsp salt to season

For  quesadilla:
1/2 chicken breast cooked and chopped (I used leftover grilled chicken)
1/4 cup shredded cheese (I used mozzarella)

First you mix all of the ingredients together to make your black bean salsa. This recipe makes enough salsa for at least 3 quesadillas. 

Heat a medium sized pan on Medium/high heat. Butter one side of your tortilla and put it in the pan butter side down. Reduce heat to medium. Add cheese to one half of the tortilla, add cut up chicken, then desired amount of salsa. 

Cook for about 3-5 minutes and then fold the empty side if your tortilla over the full side. 

Remove from heat and enjoy!
