Ingredients for salsa:
1 can Black Beans strained and rinsed
1 tomato diced
1/2 red pepper diced
1/2 onion diced
1 ear of corn cut off
1 tsp minced garlic
1/4 tsp salt to season
1/2 chicken breast cooked and chopped (I used leftover grilled chicken)
1/4 cup shredded cheese (I used mozzarella)
First you mix all of the ingredients together to make your black bean salsa. This recipe makes enough salsa for at least 3 quesadillas.
Cook for about 3-5 minutes and then fold the empty side if your tortilla over the full side.
Remove from heat and enjoy!
