These are absolutely the BEST pancakes ever! I got the recipe from a friend in Minnesota when I lived there and have been making it ever since. I am not a big fan if pancakes, but I guess I just never had GOOD pancakes! You can do variations by adding fruit or using pumpkin instead of the 2 extra TBS of milk. I also like to double the batch and freeze them. These are always a hit at our house, especially when served with sausage!
3/4 cup plus 2 tbs milk
2 tbs white vinegar
1 cup all purpose flour
2 tbs white sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tbs melted butter
Combine milk with vinegar in medium bowl and set aside for 10 minutes. (Buttermilk)
Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into buttermilk Pour the dry mixture into the wet ingredients and whisk until lumps are gone.
Fold in pumpkin or fruit here if you want to add it.
Heat a large skillet or griddle to medium/high heat and spray with cooking spray. Depending on how big you want your pancakes, depends on the size of the spoon you use. I use a medium size cooking spoon and pour batter onto the the pan or griddle and wait until bubbles show on the surface. Flip them and wait until slightly browned on the other side. Re-spray the pan in between pancake sets.
